Eggless Waffles for the hubby and Son this Saturday morning.

When my son was 10 months old I feed him eggs and 10 minutes later he broke out in hives. Let's just say we spent the day in the ER.......

This is a mother's nightmare, what I gave my child could have killed him( Thank you Jesus for saving my son).

Days after the incident all I could do was blame myself and ask God why, then I was reminded that I can do ALL things through God that gives me Strength.

Since eggs are a staple in a toddler's diet I took it upon myself to research and find alternative to eggs in cooking and baking.

This recipe is very simple, here is a list of items needed

  1. Egg free pancake mix, the brand I used is Bisquick.

  2. Oil

  3. Milk ( You can use soy milk if your child has a milk allergy)

  4. The star ingredient is the egg replacer, this acts as the binding agent

All you have to do is follow the instructions on the back of the pancake/waffle mix. Make waffles and serve with your favorite topping

This is the pancake mix I used, I bought it from Costco. If you don't have a Costco membership you can buy this at any grocery store.

I have faith that my son will out grow this allergy in Jesus name, until then I will take it one meal at a time.
