Must-Go Chicken Potato Soup

This delightful twist on traditional chicken soup replaces the classic noodles with hearty potatoes, creating a comforting bowl that's perfect for fall. The name "Must-Go" comes from my desire to use up some leftover vegetables in my fridge, ensuring nothing goes to waste. This recipe is not only quick—taking just 30 minutes—but it’s also healthy, delicious, and can be made in one pot, making it perfect for batch cooking.


Ingredients

  • 3 strips of bacon, chopped (for a lighter option, substitute with turkey bacon; for a vegetarian or vegan version, use 2 tablespoons of olive oil)

  • 6 celery stalks, chopped

  • 6 carrots, chopped

  • 2 white onions, diced

  • 3 medium-sized potatoes, cut into ½-inch cubes

  • 2 cartons of unsalted chicken stock (use vegetable stock for a vegetarian or vegan option)

  • Seasonings of your choice (I recommend a blend of salt, chicken bouillon, thyme, parsley, white pepper, and Ata Junjun for a touch of heat)

  • 4 cups rotisserie chicken, shredded



Instructions

  1. Render the Bacon: In a large pot over medium heat, add the chopped bacon. Sauté for about 3 minutes until the fat has rendered, infusing the dish with rich flavor.

  2. Sauté the Vegetables: Add the chopped carrots and celery to the pot. Cook for an additional 3 minutes, stirring occasionally, until they begin to soften.

  3. Incorporate the Onions: Stir in the diced onions and continue to cook for another 2 minutes. Season the mixture with your chosen spices to enhance the flavor profile.

  4. Add the Potatoes: Introduce the cubed potatoes to the pot, stirring well to combine all the ingredients.

  5. Pour in the Stock: Add the unsalted chicken stock. Taste the broth and adjust the seasonings if necessary.

  6. Simmer: Reduce the heat to medium-low and allow the soup to simmer for 15 minutes, or until the potatoes are tender.

  7. Finish with Chicken: Finally, stir in the shredded rotisserie chicken. Cook for an additional 5 minutes to ensure everything is well combined and heated through.



Storage

This Must-Go Chicken Potato Soup keeps well in the refrigerator for up to 5 days and can be frozen for up to 3 months, making it a convenient option for meal prep.
